We are located in the courtyard of Market Square in beautiful Victoria, British Columbia. We are open 7 days a week from 10.00am to 8.00pm. Our full buffet runs from 11.30 am until 8.00pm. Due to popular demand, we have created many new gluten-free items and converted many of our favourites to be gluten-free. This cookbook is a mix of the new recipes and gluten-free versions of some recipes from the first cookbook.

  • Chocolate Cake Base

    Makes: 1 cake base

    3⁄4 cup brown rice flour
    1⁄4 cup cane sugar
    3 tablespoons cocoa powder
    1⁄2 teaspoon baking powder
    1⁄2 teaspoon baking soda
    1⁄2 teaspoon guar gum
    1⁄2 teaspoon salt

    1⁄3 cup sunflower oil
    1 1⁄4 cups soy milk
    1 1⁄2 teaspoon vanilla
    1 1⁄2 teaspoon lemon juice

    Mix the dry ingredients. Mix the wet ingredients. Combine the wet and dry ingredients and stir thoroughly. Pour into a 9” round cake pan.

    Bake at 400°F for 25 minutes. Allow to cool in pan.
