Recipe of the Day

Sugar-free Brownies

Serves: 16

2 cups brown rice flour
1 cup cocoa or carob powder
1 1⁄2 cups walnut pieces
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon guar gum
1 teaspoon cinnamon
1⁄2 teaspoon nutmeg

1 cup sunflower oil
1 tablespoon cider vinegar
1 tablespoon vanilla
1 1⁄2 cups dates
4 cups apple juice

Simmer the dates in the apple juice for 10 minutes, allow them to cool and then blend or mash them and mix them in with all the other ingredients. Place in an oiled 12” x 9” x 1 1⁄2” rectangular cake pan and bake at 400°F for 43 minutes.

Topping

6 cups raspberries (fresh or frozen)
1 1⁄4 cups water
4 teaspoons agar powder

Bring topping mixture to a boil, cool for 15 minutes and then pour over cake and refrigerate for 2 hours before cutting and serving.
