    Wild Rice*, Apples, Carrots*, Potatoes, Squash*, Coconut Milk, Brown Rice*, Herbs & Spices, Salt.

Banana Blueberry Brown Rice Muffins

Serves: 10

2 1⁄4 cups brown rice flour
1⁄2 cup dried cane juice
3⁄4 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 teaspoon guar gum

1 3⁄4 cups mashed bananas
1⁄2 cup water
1⁄3 cup sunflower oil
1 1⁄2 teaspoons vanilla
1 1⁄2 teaspoons lemon juice

1 cup blueberries

In a bowl, mix the dry ingredients.

Add the wet ingredients to the dry and mix well.

Fold in the blueberries. Scoop into well-oiled muffin tins.

Bake at 400°F for 25 minutes.
