MARINATED TEMPEH

TEMPEH IN HERB GRAVY

2 TABLESPOONS CANOLA OIL
1-1/2 CUPS ONIONS (DICED)
1 STALK CELERY (SLICED)
½ CUP CARROTS (SLICED)
1 CUP MUSHROOMS (SLICED)

2-1/2 CUPS WATER
¼ TEASPOON ROSEMARY
½ TEASPOON THYME
½ TEASPOON BLACK PEPPER
PINCH SAGE
1 BAY LEAF
1 LARGE GARLIC CLOVE
¼ CUP SOY SAUCE
½ TEASPOON SALT

1 PACKAGE MARINATED TEMPEH (CUBED)

DISSOLVE TOGETHER:
4 TABLESPOONS TAPIOCA STARCH
1/8 CUP WATER

SAUTE VEGGIES FOR 10 MINS. ADD WATER AND ALL THE SEASONINGS AND THE TEMPEH. SIMMER FOR 10 MINS THEN STIR IN THE TAPIOCA MIX. GREAT OVER MASHED POTATOES.


TEMPEH IN CAJUN SAUCE

1/8 CUP CANOLA OIL
½ CUP ONIONS (diced)
½ CUP CARROTS (diced)
1 STALK CELERY (diced)
1 CUP MUSHROOMS (sliced)
¼ CUP GREEN PEPPERS (diced)
¼ CUP RED PEPPERS (diced)
1/4CUP JALAPENOS(diced)
1-1/2 CUPS WATER
1-1/2 TABLESPOONS MOLASSES
1-1/4 TEASPOONS CAJUN SEASONING
¼ TEASPOON SALT

1 PACK MARINATED TEMPEH (CUBED)

Dissolve together:
1/8 CUP TAPIOCA STARCH
1/8 CUP WATER

1/3 CUPS TOMATO SAUCE

SAUTE VEGGIES FOR 3 MINUTES, ADD WATER, SEASONINGS & TEMPEH, BRING TO A BOIL AND STIR IN THE DISSOLVED TAPIOCA STARCH, RETURN TO A BOIL & THEN ADD THE TOMATO SAUCE. SERVE OVER RICE OR PASTA.
