Quinoa Patties
Makes 12 patties
3 1/2 cups water
1 1/4 cups quinoa
3/4 cups millet
1/2 teaspoon salt
1 cup onions (diced)
1 cup carrots (diced)
1/4 cup oat flakes
1/4 cup potato starch
1/8 cup Bragg liquid soy
1/8 teaspoon cayenne
1/2 cup chopped walnuts
Bring the water to a boil, add the quinoa, millet, salt onions and carrots; return to a boil and simmer for 20 minutes.
Add the remaining ingredients; mix and mash a little with a potato masher.
Then shape the mixture into patties and put them on a tray in the refrigerator to cool.
To serve, just fry them on both sides in a little oil until crisp and golden.
