Soups are not just for cold weather. Sometimes we crave a nourishing soup to soothe the body. To make it easy we have come up with a quick one-pot soup recipe using our pre-seasoned and cooked Miso Gravy Tempeh. This soup doesn’t have any spices to avoid excess heat in the body during warm weather. Instead subtle herbs help elevate the taste. One can add any seasonal veggies of choice! Since pattypans are in season, we had to try them in our recipe.
1 Pack Miso Gravy Tempeh
2 Tbsp Chickpea Miso
1 Tbsp Soy Sauce
3 Brown Rice Lasagna pasta sheets (or any pasta of choice)
A few Broccoli florets and leaves
1 Cup Pattypans or Zucchini chopped
1 tsp dried Chives
2 tsp dried Herbs
Method:
Boil about 1 L of water in a pan.
Add the pasta to the boiling water and cook until soft.
Without draining the pasta, add the veggies to the pot.
Let it cook for a while and add the pack of Miso Gravy Tempeh.
Add the chives and herbs.
Mix the Miso and soy sauce, add it to the pot and switch off the heat.
Let the soup sit for a couple of minutes and serve hot.
