1 pack of Rice Paper
1 pack of Glass noodles
1 pack of GC Sweet Chilli Tempeh
1 Carrot or Beet
1 Red Bell pepper
1/4 Purple cabbage
A bunch of Thai Basil leaves
3 Bok Choy / Lettuce
To make Vietnamese spring rolls, follow these steps:
- Bring a pot of water to a boil.
- Cook the glass noodles according to the instructions on the package.
- While the noodles are cooking, thinly cut all the vegetables.
- Open a pack of sweet chilli tempeh and cut the strips into two pieces each. Set aside the sweet chili sauce for dipping.
- Prepare a large dish with fresh, cold water.
- Keep a cutting board wet.
- Dip a rice paper sheet in the water dish, remove it quickly, and lay it on the wet cutting board.
- Arrange the basil leaves, glass noodles, 2 pieces of tempeh, and a mix of the cut vegetables on top of the rice paper.
