Tofu Macaroni

Creamy mac and cheese is a comfort-food favorite, and this version sneaks in a serious nutrition upgrade. Instead of relying on butter, heavy cream, and loads of cheese, the sauce gets its creaminess from blended tofu and its “cheesy” flavor from nutritional yeast and spices.

Green Cuisine’s Medium tofu blends into a silky, mild base that adds plant-based protein and a more balanced nutrition profile, while still tasting like the classic comfort dish. You will also get a little boost from ingredients like Dijon, lemon, turmeric, and paprika, which bring tang, depth, and color without extra saturated fat.

If you are cooking for picky eaters, tofu is one of the easiest “in-disguise” ingredients. When it is blended smooth, it disappears into the sauce, and most people just taste a rich, savory mac that happens to be lighter and more wholesome than traditional mac and cheese.

Ingredients

  • 500 g macaroni pasta
  • 1 block Green Cuisine Medium tofu
  • 1/2 cup nutritional yeast
  • 2 tbsp Dijon mustard
  • 1/2 lemon, juiced
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 1 tsp turmeric powder
  • 1/2 tbsp salt
  • 1 tsp sugar
  • 2 cups water

Preparation

  1. Cook the pasta in a large pot of water.
  2. Combine all the other ingredients in a blender and blend until smooth and runny.
  3. Once the pasta is cooked, drain the water and keep the pasta in the same pot.
  4. Add the sauce and mix well until all the macaroni is coated.
  5. The sauce might look runny at first, but let it sit for 10 minutes to thicken up.
  6. This makes a large batch, so portion and refrigerate or freeze for later use.

This tofu mac is an easy way to add more plant-based protein to a familiar, kid-friendly meal without changing the vibe. Compared to traditional mac and cheese, it is typically lower in saturated fat and more protein-forward, while still delivering that creamy, comforting texture everyone expects.

It is a great option for anyone who wants a healthier weeknight staple, is easing into more plant-based meals, or simply wants a mac that feels satisfying without being overly heavy. Keep a few portions in the fridge or freezer for quick lunches and busy weeknights, and feel free to adjust the spices to match your household’s heat and flavor preferences.
