Ingredients:

2 packs of Ramen Noodles (cooked soft)

1 block of GC’s Medium firm tofu (cubed)

3 Tbsp Sesame Oil (for sautéing)

1 smal Red Onion (diced)

1 Cup Mushrooms (sliced)

1/2 Cup Snap and Sugar peas (halved)

1 Cup Lobok (chopped)

2 Carrots (chopped)

1 head Broccoli (florets)

3 Stalks of Celery (sliced)

For Sauce:

1/2 Cup Tahini

1 Tbsp Soy sauce

1 tsp Red Miso

2 tsp Chickpea Miso

1 tsp Ginger Paste

1 tsp Garlic Paste

1 tsp Chilli Paste

1 Cup Coconut milk

1/2 Cup Water

Preparation Method:

  1. Heat sesame oil in a large pot over medium heat.
  2. Add diced red onion and sauté until translucent (about 3-4 minutes).
  3. Add sliced mushrooms and cook until they release their moisture (about 5 minutes).
  4. Add carrots, celery, and lobok. Cook for 3-4 minutes until vegetables begin to soften.
  5. While vegetables are cooking, mix all sauce ingredients in a bowl until well combined.
  6. Pour the sauce mixture into the pot with the vegetables and stir well.
  7. Add broccoli florets and sugar peas. Cook for another minute to maintain their crispness.
  8. Add the cooked ramen noodles and cubed tofu.
  9. Simmer for 3-5 minutes until everything is heated through and well combined.
  10. Turn off heat, let sit for a few minutes before serving it hot.
