If you are looking for a weeknight pasta that tastes like it took far more effort than it did, this creamy garlic tempeh fusilli is it. Green Cuisine’s smoked tempeh brings a deep, savory flavor that stands up beautifully to a rich cashew-based sauce, while keeping the whole dish hearty and satisfying. The sauce comes together in minutes in a blender, and once it hits the pan, it turns silky and coats every spiral of fusilli. With plenty of garlic, a touch of Italian herbs, and a colorful mix of vegetables, this recipe is simple enough for a quick dinner but special enough to serve when you want something comforting and impressive without spending all evening in the kitchen.

Ingredients:

250g Fusilli Pasta

1 Pack GC Smoked Tempeh

5 Tbsp Extra Virgin Olive Oil

1 Full Garlic (peeled and minced)

2 tsp Italian Herbs

1/2 Zucchini

5 Sweet Peppers

15 Black Olives

5 Mushrooms

For the sauce:

1/2 Cup Cashews

1 tsp Black Pepper

2 tsp Salt

2 tsp Apple Cider Vinegar

4 Tbsp Nutritional Yeast Flakes

1/2 Cup Water

Preparation:

  1. Cook the pasta in a pot of fresh water according to the package instructions.
  2. Add all the sauce ingredients to a blender and blend until smooth.
  3. In a heavy-bottomed pan, heat the olive oil.
  4. Sauté the garlic until fragrant.
  5. Break the tempeh into rough pieces with your hands.
  6. Add the tempeh to the pan and fry until browned on the edges.
  7. Mix the Italian herbs in with the tempeh.
  8. Add the vegetables and cook for a couple of minutes.
  9. Pour the sauce into the pan, then immediately add the pasta.
  10. Toss everything together and let it sit for a couple of minutes.
  11. Serve warm.

This pasta is the kind of meal that checks all the boxes: quick, creamy, and genuinely filling, with smoky tempeh adding texture and savory depth in every bite. It is also a great recipe to make your own, since you can swap in whatever vegetables you have on hand without changing the method. If you have leftovers, the flavors continue to develop as it rests, making it an ideal make-ahead lunch or next-day dinner. Spoon into bowls, finish with a little extra black pepper or nutritional yeast if you like, and enjoy a comforting, satisfying plate that feels both simple and special.
