A Summer Delight!

Today we’re whipping up a refreshing Tofu Radish Miso featuring Green Cuisine’s handcrafted goodies from right here in Downtown Victoria. This light yet satisfying dish is perfect for those warm summer evenings when you want something nourishing without the heaviness.

What Makes This Special

Our star ingredients! Green Cuisine’s Extra Firm Tofu (made from organic Canadian soybeans since 1990) and the traditionally fermented Chickpea Miso that develops its magic in ceramic crocks. The combo creates an amazing umami base that’ll have you coming back for seconds!

Ingredients

  • 1 Block GC Extra Firm Tofu (cubed)
  • 2 Tbsp Chickpea Miso
  • 3 Garden Red Radishes (sliced)
  • 1/4 Daikon Radish (chopped)
  • 1 Carrot (diced)
  • 1/4 Cabbage (chopped)
  • 2 Green Onions (sliced, whites & greens separated)
  • 2 Celery Stalks (diced)
  • 2 Bok Choy (chopped)
  • 1 Tbsp Soy Sauce
  • 2 tsp Salt
  • 2 Tbsp Sesame Oil
  • 1 tsp Garlic Powder
  • 4 cups Water

Let’s Cook!

  1. Prep all your veggies first – this makes the cooking process smooth sailing!
  2. Heat up sesame oil in a pot and toss in the white parts of green onions and celery. Let them sizzle for about 2 minutes until they smell amazing.
  3. Add carrots, daikon, cabbage and salt. Keep stirring occasionally until the veggies release their water and start to caramelize slightly on the pot bottom.
  4. Pour in 4 cups of water and scrape up all those flavor-packed bits from the bottom.
  5. Let everything bubble gently for 2-3 minutes.
  6. Time for the garden radishes, bok choy, and green onion tops! Add them in, then drizzle another teaspoon of sesame oil for extra aroma.
  7. Gently slide in your tofu cubes, sprinkle with garlic powder and soy sauce.
  8. Cover and simmer for 5 minutes on low-medium heat.
  9. Turn off the heat completely (important!), then dissolve the miso into the hot soup. Remember: never boil miso or you’ll lose its probiotic goodness!
  10. Stir everything together and serve in warm bowls. Voilà!
