Ingredients:
3 Cups Pasta (we used brown rice fusilli and penne)
1 Block Smoked Tofu (chunks)
1/2 Lemon
2 Tbsp Olive Oil
1 tsp Salt
1/2 Cup Pesto Dressing (find recipe here: https://www.greencuisine.com/pesto-crostini-with-tofeta-and-roasted-tomatoes/)
A few Celery Stalks (diced)
A bunch of Arugula leaves
4 Red sweet peppers (sliced)
10 Cherry Tomatoes (halves)
1 Avocado (diced)
2 Tbsp Nutritional Yeast fFlakes)
1 Tbsp Hemp Seeds
Preparation:
- Cook the pasta according to package instructions until soft. Drain most of the water, leave a tiny bit in the pot itself.
- Shred the smoked tofu into bite-sized chunks.
- Squeeze half a lemon over it, sprinkle some salt and olive oil and set aside.
- Into the pasta, combine the pesto and mix well.
- Add the tofu chunks and combine the pasta. Keep aside while prepping the vegetables.
- Add the celery, sliced red sweet peppers, cherry tomato halves, and arugula leaves to the bowl.
- Add the diced avocado and fresh thyme leaves.
- Toss everything together carefully to avoid mushing the pasta and avocado.
- Let the salad rest for 10 minutes to allow flavors to meld.
- Serve at room temperature. Garnish with nutritional yeast flakes, hemp seeds over the pasta before serving.
